

These light, healthy, and nutritious breakfast bars are the perfect solution for a quick breakfast or snack throughout the day. They can be prepared in advance for the whole week.
Ingredients
125 g of quinoa
1 banana
30 g of butter
1 tablespoon of chia seeds
50 g of coconut flakes
50 g of wheat flour
20 g of sesame seeds
1/2 cup of water
1 tablespoon of cinnamon
2 tablespoons of maple syrup
2 tablespoons of dried cranberries
2 tablespoons of nuts (any kind, e.g., walnuts, almonds)
Preparation
Rinse the quinoa under cold water, then cook it in a pot with 1/2 cup of water for about 15 minutes, until it absorbs all the water and becomes puffed up. Leave to cool.
In the meantime, mash the banana in a bowl. Add the cooled quinoa and the remaining ingredients: butter, chia seeds, coconut flakes, flour, sesame seeds, maple syrup, nuts, and dried cranberries. Mix everything thoroughly.
Preheat the oven to 180°C. Line a baking sheet with parchment paper, evenly spread the prepared mixture, and shape into bars. Bake for about 50 minutes, until golden brown. Let cool before serving.
