These light, healthy, and nutritious breakfast bars are the perfect solution for a quick breakfast or snack throughout the day. They can be prepared in advance for the whole week.

Ingredients

125 g quinoa
1 banana
30 g butter
1 tablespoon chia seeds
50 g coconut flakes
50 g wheat flour
20 g sesame seeds
1/2 cup water
1 tablespoon cinnamon
2 tablespoons maple syrup
2 tablespoons dried cranberries
2 tablespoons nuts (any kind, e.g., walnuts, almonds)

Preparation

Rinse the quinoa under cold water.

Cook the quinoa in a pot with 1/2 cup water for about 15 minutes, until it absorbs all the water and becomes puffed up.

Leave the quinoa to cool.

Mash the banana in a bowl.

Add the cooled quinoa and the remaining ingredients: butter, chia seeds, coconut flakes, wheat flour, cinnamon, sesame seeds, maple syrup, nuts, and dried cranberries.

Mix everything thoroughly.

Preheat the oven to 180°C.

Line a baking sheet with parchment paper.

Evenly spread the prepared mixture on the baking sheet.

Shape into bars.

Bake for about 50 minutes, until golden brown.
