Ingredients

2 fillets of white fish (e.g., cod, sea bass)
flour for dredging the fish
oil for frying

Pesto

fresh parsley
1 garlic clove
olive oil
2 tablespoons lemon juice
salt and pepper

Tartar Sauce

1 pickled cucumber
4-5 pickled mushrooms (or pickled button mushrooms)
1 tablespoon capers
1 tablespoon small pickled onions
2 tablespoons mayonnaise
2 tablespoons yogurt
1 teaspoon mustard
sugar to taste
salt and pepper

Preparation

Prepare the tartar sauce: In a bowl, mix the mayonnaise, yogurt, and mustard.
Finely chop the cucumber, mushrooms, capers, and onions, then add them to the sauce.
Season the sauce with salt, pepper, and sugar.
Prepare the pesto: In a mortar, finely chop the parsley and garlic.
Add the olive oil, lemon juice, salt, and pepper. Mix.
Salt the fish fillets, then dredge them in flour.
Heat the oil in a pan and fry the fish until golden brown on both sides.
Serve the fried fish topped with parsley pesto. Serve the tartar sauce on the side.
