Ingredients
2 double chicken breasts
12 white or green asparagus spears
olive oil
meat marinade
150 ml buttermilk
1 teaspoon mustard
1 teaspoon balsamic vinegar
1 teaspoon chopped fresh thyme
1 garlic clove
Herbes de Provence
sweet and hot paprika
salt and pepper
Preparation
Asparagus Sauce Preparation
Peel the asparagus and cook them in salted water with a little butter until tender.
After cooking, blend the asparagus, keeping the cooking liquid.
In a pot, melt a tablespoon of butter, add flour, and pour in the asparagus cooking liquid. Cook, stirring, until the sauce reaches the desired consistency — not too thick, not too thin.
Add the blended asparagus to the sauce and mix thoroughly.
Meat Preparation
Mix the marinade ingredients (buttermilk, mustard, balsamic vinegar, thyme, garlic, Herbes de Provence, paprika, salt, and pepper) in a bowl.
Pour the marinade over the chicken breasts, cover, and refrigerate for about three hours to let the meat absorb the flavors.
After marinating, grill the chicken breasts in a grill pan, using olive oil.
Serving
Cook the remaining asparagus in salted water with a little butter until tender.
Place the grilled chicken breasts on a plate, and arrange the cooked asparagus next to them.
Pour the prepared asparagus sauce over the chicken and asparagus.
Serve with roasted baby potatoes on the side.
