Ingredients
2 tablespoons butter
1 tablespoon flour
250 ml heavy cream (30%)
1 tablespoon sour cream
pinch of turmeric
bunch of chopped dill
1 kg ground meat (pork and beef mix)
2 eggs
1 egg yolk
1 onion
1 garlic clove
1.5 liters of broth
spices: sweet paprika, hot paprika, white pepper
olive oil
fresh dill
Preparation
Melt the butter in a saucepan over low heat. Add the flour and stir with a whisk until the ingredients form a smooth mixture.
Pour in the heavy cream and add one tablespoon of sour cream. Gradually add the cream to prevent the sauce from becoming too thick.
Season the sauce with salt, pepper, and turmeric to give it a golden color. Add the chopped dill and cook for a minute, stirring.
Remove the sauce from the heat and immerse the prepared meatballs in it.
Meatballs
In a large bowl, place the ground meat, add the eggs, egg yolk, finely chopped onion, and minced garlic.
Season the meat with salt, pepper, sweet and hot paprika, and add a tablespoon of olive oil.
Add fresh, chopped dill and mix everything thoroughly to combine the ingredients.
Form small balls and drop them into the simmering broth. Cook for about 30 minutes over low heat.
Use a slotted spoon to remove the cooked meatballs and serve them in the dill sauce.
