Pancakes with cheese and strawberries are a great idea for a delicious breakfast or dessert.
Ingredients

Batter
5 eggs
1 cup of milk
2 tablespoons sour cream or yogurt
1/2 cup of sparkling water
1 flat teaspoon of baking powder
5 tablespoons vegetable oil
2 cups of flour
a pinch of salt
Filling
500 g white cheese
1 egg yolk
3 tablespoons sugar
200 g heavy cream
1/2 vanilla pod (or vanilla sugar)
250 g strawberries
2 tablespoons honey
powdered sugar

In a bowl, mix the eggs with milk, sparkling water, vegetable oil, sour cream, and a pinch of salt.2
Mix the flour with baking powder, add to the egg mixture, and blend into a batter with the consistency of pouring cream.3
If the batter is too thin, add a little flour; if too thick, add some milk.4
Let the batter rest for 30 minutes.5
Heat a frying pan and add a teaspoon of oil. Fry the pancakes by spreading a thin layer of batter on the pan until golden brown, then flip to the other side.6
