


Pancakes with cheese and strawberries are a great idea for a delicious breakfast or dessert.
Ingredients
Dough
5 eggs
1 cup of milk
2 tablespoons sour cream or yogurt
half a cup of sparkling water
1 flat teaspoon of baking powder
5 tablespoons vegetable oil
2 cups of flour
a pinch of salt
Filling
500 g white cheese
1 egg yolk
3 tablespoons sugar
200 g heavy cream
half a vanilla pod (or vanilla sugar)
250 g strawberries
2 tablespoons honey
powdered sugar
Preparation
In a bowl, mix eggs with milk, sparkling water, vegetable oil, and sour cream. Add a pinch of salt. Mix the flour with baking powder, then add to the egg mixture. Blend everything until the dough reaches the consistency of pouring cream. If the dough is too thin, add a little flour, and if it's too thick, add some milk. Let the dough rest for half an hour.
Heat a frying pan and add a teaspoon of oil. Then, fry the pancakes, spreading a thin layer of dough on the pan. Fry each pancake until golden brown, then flip it to the other side.
To prepare the cheese filling, mash the cheese with a fork, add the egg yolk, sugar, cream, and half a vanilla pod. Mix thoroughly, then spread the filling on the fried pancakes.
Roll up the pancakes and fry them on the pan without oil over medium heat until they become slightly crispy.
Cut the strawberries into small pieces and place them in a pot. Heat over medium heat until the strawberries release their juice. Add honey, mix, and pour the resulting glaze over the pancakes. Before serving, dust with powdered sugar.
