Pancakes with cheese and strawberries are a great idea for a delicious breakfast or dessert.

Ingredients

Batter

5 eggs
1 cup of milk
2 tablespoons sour cream or yogurt
1/2 cup of sparkling water
1 flat teaspoon of baking powder
5 tablespoons vegetable oil
2 cups of flour
a pinch of salt

Filling

500 g white cheese
1 egg yolk
3 tablespoons sugar
200 g heavy cream
1/2 vanilla pod (or vanilla sugar)
250 g strawberries
2 tablespoons honey
powdered sugar

Preparation

In a bowl, mix the eggs with milk, sparkling water, vegetable oil, sour cream, and a pinch of salt.

Mix the flour with baking powder, add to the egg mixture, and blend into a batter with the consistency of pouring cream.

If the batter is too thin, add a little flour; if too thick, add some milk.

Let the batter rest for 30 minutes.

Heat a frying pan and add a teaspoon of oil. Fry the pancakes by spreading a thin layer of batter on the pan until golden brown, then flip to the other side.

Mash the white cheese with a fork, add the egg yolk, sugar, cream, and 1/2 vanilla pod, and mix thoroughly.

Spread the filling on the fried pancakes and roll them up.

Fry the rolls on the pan without oil over medium heat until slightly crispy.

Cut the strawberries into small pieces, place in a pot, and heat over medium heat until they release their juice.

Add the honey, mix, pour the glaze over the pancakes, and dust with powdered sugar before serving.
