

Quinoa with spinach is an excellent base for creating a healthy and delicious meal, perfect for breakfast, lunch, or dinner. Ingredients
1 cup quinoa
50 g fresh spinach
Juice of half a lemon
1/4 cup oil (sunflower)
1 shallot
a handful of parsley
chives
salt
Preparation
Cook the quinoa according to the instructions on the package.
Finely chop the shallot and sauté it in a pan with a little olive oil until it becomes translucent.
Blend the fresh spinach, parsley, chives, sautéed shallot, lemon juice, and oil in a blender until a smooth mixture is obtained.
Season with salt to taste.
Add the prepared paste to the cooked quinoa.
Mix all the ingredients until the quinoa takes on a uniform green color.
Serve as a base for breakfast, lunch, or dinner. Add toppings according to your preferences.
