Toast with Fresh Peas and Broad Beans 1

A vegetable toast is a creative idea for a sandwich and a way to make use of often underrated vegetables.

Ingredients

120 g of green peas (fresh or frozen)
120 g of broad beans
half a red onion
one garlic clove
a handful of parsley
salt and pepper
lemon juice
a small amount of Roquefort cheese
four slices of bread
olive oil

Preparation

Cook the broad beans in salted water, then remove them with a slotted spoon.
In the same water, cook the green peas for about 5 minutes. Note: use fresh or frozen peas, not canned.
Heat a bit of olive oil in a pan and sauté the chopped red onion.
Add the cooked broad beans, green peas, and a crushed garlic clove.
Squeeze in some lemon juice and season with salt and pepper.
Sprinkle everything with chopped parsley, mix well, and cook for a few more minutes over medium heat.
Toast the bread slices in a toaster.
Spread the vegetable mixture on each slice of bread, then crumble some Roquefort cheese on top.
