Preheat the oven to 180°C.2
Line a baking sheet with parchment paper.3
Unroll the dough and form slightly raised edges.4
Spread the ricotta evenly over the dough, leaving a small border.5
Drizzle with olive oil.6
Sprinkle with chopped thyme and rosemary.7
Arrange thin slices of garlic on top.8
Bake for about 20 minutes, until the dough turns lightly golden.9
Slice the larger tomatoes thinly.10
If using small tomatoes, cut them in half.11
Cut the mozzarella into slices.12
Remove the tart from the oven.13
Arrange the tomatoes and mozzarella on top.14
Sprinkle with grated Parmesan and season with salt and pepper.15
Bake for another 10 minutes, until the mozzarella melts and the tart turns golden.Serving
Serve warm, garnished with fresh basil leaves.
