

The colorful tomato tart looks like a painting made with tomatoes and tastes as good as it looks.
To prepare the tart, you'll need tomatoes of different varieties. The more diverse their colors, the better. There is a wide selection, from classic red, orange, or yellow to green and brown.
Ingredients
150 g of assorted tomatoes
1 roll of pizza dough (pizza base)
30 g of Parmesan
1 circle of mozzarella cheese
150 g of ricotta cheese
1 tablespoon of olive oil
a bunch of fresh thyme and rosemary
1 small clove of garlic
salt and pepper
a few basil leaves
Preparation
Preheat the oven to 180°C. Prepare a baking sheet and line it with parchment paper. Roll out the pizza dough and place it on the sheet, forming the edges of the tart.
Evenly spread the ricotta cheese over the dough, leaving a small border on the outside. Drizzle with olive oil, then sprinkle with chopped thyme and rosemary. Top with thinly sliced garlic.
Place the tart in the oven and bake for 20 minutes until the dough turns lightly golden.
Meanwhile, prepare the tomatoes. Slice the large tomatoes into thin rounds and cut the small cherry tomatoes in half. After baking, remove the tart from the oven.
Arrange the prepared tomatoes on top of the tart. Lay slices of mozzarella over the tomatoes. Sprinkle with salt, pepper, and grated Parmesan.
Place the tart back in the oven for another 10 minutes until the mozzarella starts to melt and the tart becomes golden.
After removing from the oven, garnish the tart with fresh basil leaves. Serve warm.
