Tasty, healthy, and hearty vegetarian patties made with zucchini and bulgur wheat, perfect as a side dish for a main course for 4 people.

Ingredients

1 medium zucchini
2 carrots
1 cup bulgur wheat
2 shallots
2 eggs
breadcrumbs for coating
a handful of fresh dill
a handful of fresh parsley
salt and pepper to taste
a little olive oil for greasing the baking tray

Preparation

Grate the zucchini and carrots using a coarse grater, then squeeze out the excess water.
Cook the bulgur wheat in a ratio of 1 cup of bulgur to 2 cups of water. Let it cool for about 30 minutes, until it absorbs all the water.
Finely chop the shallots, dill, and parsley. Combine all the ingredients: bulgur, vegetables, and herbs.
Add the eggs, season with salt and pepper, and mix everything well until you get a uniform mixture.
Form patties and coat them with breadcrumbs.
Place the patties on a baking tray greased with olive oil and bake in a preheated oven at 220°C (425°F) for about 30 minutes. Occasionally drizzle the patties with olive oil to ensure they brown evenly.
Serve the patties as a delicious side dish to a main course.
