Zucchini stew is a classic dish from Hungarian cuisine that has also gained popularity in Poland. This combination of vegetables, sausage, and spices in one pot makes it an ideal quick meal for 4 people.
The stew is not only delicious but also very versatile – you can prepare it with various vegetables depending on the season.
Ingredients
2 small zucchinis (green and yellow)
1 onion
200 g of small button mushrooms
2 tomatoes
2 sausages
1 garlic clove
150 g of canned corn
1/2 liter of tomato puree
powdered chili, salt, and pepper
oil for frying
Preparation
Sauté the mushrooms in a little oil until golden. If the mushrooms are large, cut them into quarters.
Transfer the sautéed mushrooms to a pot, then sauté the finely chopped onion in the same pan until lightly golden. Add the garlic and cook for a moment, then transfer everything to the pot with the mushrooms.
In the same pan, sauté the diced sausages, then add them to the pot.
Peel the tomatoes and add them to the pot along with the tomato puree.
Cover and simmer on medium heat for about 15 minutes. Then add the diced zucchini and corn. Simmer for a few more minutes until the zucchini is al dente. Season with chili powder, salt, and pepper.
