Ingredients

500 g sweet potatoes
150 ml broth
fresh oregano
olive oil
parsley

Preparation

Slice the sweet potatoes into thin, even slices using a mandoline slicer.
Arrange the slices tightly in a baking dish.
Pour warm broth over the potatoes, drizzle with olive oil, and season with fresh oregano.
Bake in an oven preheated to 210°C for 40-45 minutes.
Baste the potatoes with broth occasionally to keep them moist.
If the potatoes start browning too much, cover them with aluminum foil.
Serve garnished with chopped parsley as a side dish.
