This hearty salad is the perfect combination of ingredients – healthy broad beans, rich in protein, and bulgur, full of fiber.

A dish that will satisfy both vegetarians and food enthusiasts.

Ingredients

500g of broad beans
1 cup of bulgur
4 tablespoons of mayonnaise
4 tablespoons of Greek yogurt
1 teaspoon of mustard
lemon juice
fresh parsley
dill
salt and pepper to taste

Preparation

Cook the broad beans in salted water until tender (about 10-15 minutes). After cooking, drain, cool, and peel off the skins.
In a separate pot, cook the bulgur al dente by adding two cups of water. Cook according to the package instructions and then set aside to cool.
Finely chop the dill and parsley. In a large bowl, mix the cooled bulgur with the dill and chopped parsley.
In a separate bowl, combine the mayonnaise and Greek yogurt.
Add mustard, lemon juice, salt, and pepper to taste. Stir well until the mixture forms a smooth dressing.
Place the broad beans at the bottom of a jar or salad bowl, then add the bulgur. Top with the dressing.
The salad is ready to serve. You can serve it immediately or chill it in the refrigerator before serving.
