Ingredients
400 g farmer's cheese (or quark), ground
1 egg
1 tablespoon corn starch or potato starch
approx. 180 g all-purpose flour
pinch of salt
brown sugar (to taste)
a little butter
cranberries

Combine the farmer's cheese, egg, a pinch of salt, 1 tablespoon of starch, and most of the flour in a bowl (reserve some for dusting). Knead into a soft, slightly sticky dough.2
Divide the dough into 2 logs. On a lightly floured surface, shape the logs and cut them into small pieces.3
Bring salted water to a boil. Cook the dumplings in batches for about 2–3 minutes after they float to the surface. Remove and set aside.4
Melt the butter in a pan, add a little brown sugar, then add the cranberries. Fry briefly until a buttery glaze forms.5
Add the cooked dumplings to the pan and fry, stirring, until golden and lightly crispy, coated in the glaze.Notes
