Raspberry tiramisu for Mother's Day. For my mom and not only for my mom.
Ingredients

300 g raspberries (frozen or fresh)
250 g mascarpone cheese
4 eggs
1/2 cup powdered sugar
100 g ladyfingers
1 cup strong cooled coffee
4 tablespoons amaretto liqueur
cocoa powder for dusting
mint leaves for decoration
Preparation

Thaw the raspberries if using frozen.2
Separate the egg yolks from the whites.3
Beat the yolks with the powdered sugar using a mixer until smooth.4
Add the mascarpone cheese and mix until combined.5
Beat the egg whites in a separate bowl into stiff peaks.6
Gently fold the egg whites into the cream on low speed.7
Mix the coffee and amaretto liqueur together.8
Dip the ladyfingers in the coffee and amaretto mixture.9
Layer the soaked ladyfingers in serving cups.10
Mash the raspberries with a fork.11
Spread the mashed raspberries over the ladyfingers as the next layer.12
Fill the cups with the mascarpone cream.13
