Raspberry tiramisu for Mother's Day. For my mom and not only for my mom.

Ingredients

300 g raspberries (frozen or fresh)
250 g mascarpone cheese
4 eggs
half a cup of powdered sugar
100 g ladyfingers
1 cup strong cooled coffee
4 tablespoons amaretto liqueur

Preparation

If using frozen raspberries, first thaw them. Separate the egg yolks from the whites and mix the yolks with powdered sugar using a mixer until smooth. Add mascarpone cheese.
In a separate bowl, beat the egg whites into stiff peaks and gently fold them into the prepared cream. Mix everything together on low speed.
Mix the coffee and amaretto liqueur together, then dip the ladyfingers in the mixture. Layer the soaked ladyfingers in serving cups.
Mash the raspberries with a fork and place them on top of the ladyfingers, creating another layer. Then fill the cups with the prepared mascarpone cream.
Finish the dessert by sprinkling the top with cocoa powder and decorating with a mint leaf and a raspberry.
